Banana Muffins and Bacon with MCT Shot

Step 1

Preheat oven to 190°C/fan 170°C/gas mark 5.

Step 2

Mix together mashed banana and ground almonds.

Step 3

Add 50g K.Quik, egg, carbohydrate free baking powder and sweetener to this mixture and stir.

Step 4

Divide mixture equally into two cupcake/silicone moulds and bake for 15-20 minutes until risen and golden.

Step 5

Grill bacon for approximately 10 minutes until cooked on both sides.

Step 6

Serve both muffins and bacon with 50g ‘shot’ of K.Quik.

Top Tip

Leave muffins to cool before removing from moulds
